Hot cake

1 1/2 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 cup milk
3 egg yolks, well beaten
3 egg whites, beaten
6 tbsp. melted butter or margarine

  • Sift dry ingredients together.
  • Beat egg yolks, add milk and melted butter.
  • Combine and stir quickly.
  • Fold in white and add more milk if necessary to make batter thin enough to pour.
  • Heat frying pan with a little fat.
  • Pour about 1/2 cup of batter and cook one side until delicately brown.
  • Turn and cook other side.
  • If desired, raisins, toasted pinipig, and chopped nuts may be added to give flavor and texture.

Serve with butter and syrup.
